VIDEO: Salmon Courgetti with Lucy’s Authentic Asian

This simple dish makes a very frequent appearance in Lucy’s kitchen. You only need 3 ingredients and 10 minutes and you’ve got a nourishing and delicious meal for one!

Serves 1 (easily scaled up to serve more)


Lucy’s Authentic Asian OR Low Sugar Ginger Sesame dressing
1 boneless salmon fillet, skin on
1 medium courgette
1/2 red chilli, finely chopped (optional)
handful of fresh coriander, roughly chopped (optional)


1. Pour Lucy’s Authentic Asian or Ginger Sesame dressing over the salmon fillet and toss to coat.

2. Place the fish on a baking tray and cook under a hot grill for approx. 4 minutes either side. Alternatively, heat a frying pan until hot, then lay the salmon fillet in, skin-side down. Fry the fillet for 4-5 minutes on this side, until the salmon starts to change colour in the middle. Turn the fillet over for a further 2-3 minutes, until the salmon is just cooked.

3. While the fish is cooking, use a spiralizer or julienne peeler (we recommend this one) to turn your courgette into noodles/ribbons. Add to a bowl.

4. Remove salmon from pan and gently flake with a fork. Add to the “courgetti”, pour a generous amount of Lucy’s dressing over the top and toss to combine.

5. Garnish with chilli and coriander, if desired.

6. Enjoy!
