Canapés & Light Bites

This is a great little snack because it’s simple yet effective. Buy corn tortillas wraps and slice each wrap like a pizza into 8 slices. Brush both sides with oil, sprinkle with salt and place in the oven at 180degs for around 10minutes. You could even sprinkle chilli powder for an extra kick. After this time they will be crispy tortilla chips ready for dipping in Lucy’s Punchy Plum. .
This one is a great cheat, buy some duck spring rolls, heat them up and slice them into smaller bitesize chunks. Pop out a dish of Lucy’s Punchy Plum and some cocktail sticks and hey presto! It’s ok to take shortcuts, especially at Christmas time.
Spread soft goat’s cheese on a Peters Yard biscuit or thin crisp breads and top it with a covering of Lucy’s Blushing Beetroot, the combination is a winner! This makes an excellent canapé or use crusty bread and serve as a starter.
For this one we’ve used rye bread but again you can choose. Lightly toast the bread and cut into small squares. Spread Lucy’s Blushing Beetroot on top and add a tiny fillet of smoked trout. Simple though it has the wow factor.
Lightly toast some nice bread (you decide). Spread over some pate (you can use any type of pate but we decided to go vegetarian). On top add Lucy’s Punchy Plum relish and you’ve got a really moreish starter.
This one is so easy, buy a good quality crab meat (we used Seafood & Eat it, Cornish White Crab meat) and stir through Lucy’s brand new Lemon Mayo. Or you can use Lucy’s Zesty Mayo dressing too. Serve with fresh lemon on toast
Pour a drop of olive oil into a small frying pan and toss around some chopped spring onions (and chilli if you like). Add the prawns and fry for around a minute on each side or until they are pink all over. Then add a good helping of Lucy’s Light Asian, making sure that it has been shaken well. Heat through and serve.
This is a really easy but impressive canapé. Start with a small piece of parma ham on a flat surface and place a sundried tomato on top and a sprinkling of rocket. Drizzle Lucy’s Classic Balsamic over and tightly roll up the parma ham to create a delicious parcel.
