Quick New Potato Salad (serves 4)
- 400g-500g Jersey Royal or small new potatoes, scrubbed not peeled
- a bunch of spring onions or a red onion, thinly sliced
- small bunch of fresh mint
- small bunch of fresh parsley
- freshly ground black pepper
- Place potatoes in cold water with a stalk of two of fresh mint and
some salt, bring to the boil. Once boiling the potatoes will probably
take about 8 minutes but you should check them after 5/6 minutes. Take
off the boil when they are just tender.
- Whilst the potatoes are boiling wash and trim the spring onions and
slice thinly.
- You should also wash the fresh herbs dry them with kitchen roll and
chop finely.
- Once the potatoes are tender, take them off the heat drain and slice
in half lengthways. Place in a shallow dish with the onions.
- Add a generous helping of Lucy's Zesty Mayo
Dressing and toss. Make sure that the potatoes are thoroughly
coated.
- Add the fresh herbs and toss again. If required sprinkle with freshly
ground black pepper.
