Zesty Mayo Dressing

Quick New Potato Salad (serves 4)

  • 400g-500g Jersey Royal or small new potatoes, scrubbed not peeled
  • a bunch of spring onions or a red onion, thinly sliced
  • small bunch of fresh mint
  • small bunch of fresh parsley
  • freshly ground black pepper
  1. Place potatoes in cold water with a stalk of two of fresh mint and some salt, bring to the boil. Once boiling the potatoes will probably take about 8 minutes but you should check them after 5/6 minutes. Take off the boil when they are just tender.
  2. Whilst the potatoes are boiling wash and trim the spring onions and slice thinly.
  3. You should also wash the fresh herbs dry them with kitchen roll and chop finely.
  4. Once the potatoes are tender, take them off the heat drain and slice in half lengthways. Place in a shallow dish with the onions.
  5. Add a generous helping of Lucy's Zesty Mayo Dressing and toss. Make sure that the potatoes are thoroughly coated.
  6. Add the fresh herbs and toss again. If required sprinkle with freshly ground black pepper.
